Clinical research shows that this patience completely transforms how bread behaves inside your body.


1. Stable Blood Sugar & Lasting Energy

Standard commercial sandwich bread has a high glycemic index (GI), typically ranging from 70 to 80. This rapid digestion causes a sharp spike in blood glucose followed by a sudden crash.

Traditional, long-fermented sourdough has a significantly lower glycemic index of approximately 54. During the slow fermentation process, active microbes consume sugars and alter the starch profile. Sourdough fermentation shifts carbohydrates away from rapidly digestible starch and increases slowly digestible starch (SDS) and prebiotic resistant starch (RS). This means your body absorbs the carbohydrates gradually, providing steady, sustained energy.
