How to Get Your Fresh Bread

Because we are a local, home-based cottage kitchen, we don't bake extra loaves to sit on shelves. Every single item we bake is made specifically for you. Because real sourdough takes up to three days to naturally ferment, we operate on a pre-order and "product drop" schedule.

Step 1: Pre-Order in Advance

Since our long fermentation process cannot be rushed, all orders have a 4-day cutoff window. This helps us guarantee ingredients, plan our bakes, and eliminate food waste entirely.

Step 2: Choose Your Drop Day

We schedule fresh "Product Drops" Sunday through Thursday. When placing your order, simply select which drop day you want to receive your bakes (just make sure it is at least 4 days in the future!).

Step 3: Pickup or Local Delivery

  • Home Pickup: Swing by our home kitchen in Frederick, MD to collect your bakes fresh and warm. Out-of-state visitors and commuters are always welcome to pick up in person!

  • Local Delivery: We deliver physical orders directly to your doorstep within Frederick city and surrounding zip codes: 21701, 21702, 21703, 21704, and 21705 (no PO Boxes).

Why Our Fermentation is Different

We believe bread should be both nourishing and gentle on your body. While rapid commercial baking is designed for efficiency and speed using instant yeast, we choose a different path: a wild starter culture and slow, patient fermentation.

  • Gentle on Your Stomach: Our long, slow fermentation acts as a natural "pre-digestion" step. Lactic acid bacteria break down difficult wheat proteins and degrade gluten, making our loaves incredibly comfortable to digest.

  • Steady Energy, No Crashes: While standard store-bought breads typically have a high glycemic index (GI) of 70 to 80, authentic sourdough has a low glycemic index of approximately 54. This gradual absorption prevents sudden blood sugar and insulin spikes, giving you stable, lasting energy.

  • Unlocked Nutrition: The natural acidity generated during our long proofing process breaks down phytic acid (an "anti-nutrient" found in grains), dramatically increasing your body's ability to absorb vital minerals like iron, zinc, and calcium.

"I started the Sourdough Guild after noticing that standard store-bought sandwich breads were consistently upsetting my stomach. It made me wonder: was it the specific baking process used, or perhaps the long list of ingredients required to keep bread shelf-stable?

This concern led me to explore how modern bread is produced. While industrial breadmaking is a remarkable marvel of efficiency and scale, I became curious about what might be lost when we speed up a process that historically took days. I began to ask a simple question: 'What was bread before all of this?'

That curiosity drove me to go back to the ancient basics, coax a wild starter culture to life, and try baking traditional sourdough. The difference was night and day. Not only did my digestive comfort return, but the deep, complex flavor of real bread was restored. What began as a personal journey to understand how bread affects our bodies is now a weekly baking tradition for my family, friends, and local Frederick neighbors."

"The word Guild was chosen with purpose. While we are starting small with fire in our home oven, our long-term dream is to foster a thriving movement. We want to build a supportive community of bread enthusiasts, home fermenters, and fellow cottage food entrepreneurs.
